Chex Scotcheroos

Chex Scotcheroos with crunchy cereal, peanut butter base, and chocolate butterscotch topping.

Servings 24 clusters

Ingredients
  

  • 6 cups Rice Chex cereal
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips

Instructions
 

  • Line baking sheet with parchment. Heat sugar and corn syrup until just bubbling. Remove from heat and stir in peanut butter. Pour over cereal and mix gently. Drop clusters onto sheet. Melt chocolate and butterscotch chips and spoon over clusters. Let set before serving.

Notes

Do not overcook sugar mixture. Stir cereal gently to avoid crushing.
