Chewy Coconut Cookies

Chewy coconut cookies made with butter, brown sugar, and sweetened coconut for soft centers and crisp edges.

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups sweetened shredded coconut

Instructions
 

  • Preheat oven to 350°F and line baking sheets with parchment paper.
  • Cream butter, brown sugar, and granulated sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Mix in vanilla extract.
  • In a separate bowl, whisk flour, baking soda, and salt.
  • Add dry ingredients to wet ingredients and mix just until combined.
  • Fold in shredded coconut until evenly distributed.
  • Scoop dough onto baking sheets, spacing cookies 2 inches apart.
  • Bake for 10–12 minutes until edges are lightly golden and centers are soft.
  • Cool on baking sheet for a few minutes, then transfer to a wire rack.

Notes

Do not overbake. Cookies will continue to set as they cool and stay chewy inside.
