Instructions
Brown ground beef in a skillet over medium heat, then drain excess grease.
Add taco seasoning and water, stirring and simmering until thickened.
Place diced potatoes in a crockpot.
Add cooked beef, cream of chicken soup, sour cream, salt, and pepper.
Mix everything gently to combine.
Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
Stir in shredded cheese during the last 20 minutes of cooking.
Mix until cheese is melted and creamy.
Serve warm with optional toppings.
Notes
Cut potatoes evenly for best cooking results.
Add cheese at the end to keep texture smooth.
Adjust spice level with jalapeños or seasoning.
