Cheesy Taco Potatoes

Cheesy Taco Potatoes Recipe with seasoned beef, creamy sauce, tender potatoes, and melted cheese.

Ingredients
  

  • 4 cups potatoes peeled and diced
  • 1 lb ground beef
  • 1 packet taco seasoning about 2 tbsp
  • ½ cup water
  • 2 cups shredded cheddar cheese
  • 1 can 10.5 oz cream of chicken soup
  • ½ cup sour cream
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp chopped green onions
  • 1 –2 jalapeños
  • ½ cup salsa
  • 1 cup black beans
  • 1 cup corn

Instructions
 

  • Brown ground beef in a skillet over medium heat, then drain excess grease.
  • Add taco seasoning and water, stirring and simmering until thickened.
  • Place diced potatoes in a crockpot.
  • Add cooked beef, cream of chicken soup, sour cream, salt, and pepper.
  • Mix everything gently to combine.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
  • Stir in shredded cheese during the last 20 minutes of cooking.
  • Mix until cheese is melted and creamy.
  • Serve warm with optional toppings.

Notes

Cut potatoes evenly for best cooking results.
Add cheese at the end to keep texture smooth.
Adjust spice level with jalapeños or seasoning.
