Cheesy Potato Quesadilla

Cheesy potato quesadilla made with mashed potatoes, melted cheese, and crispy tortillas. A quick and easy snack recipe.

Ingredients
  

  • 2 cups potatoes boiled and mashed
  • 4 medium flour tortillas
  • 1 cup shredded cheese
  • ¼ cup onion finely chopped
  • 1 tablespoon green chili optional
  • 2 tablespoons butter or oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon cumin powder

Instructions
 

  • In a bowl, combine mashed potatoes, chopped onion, green chili, salt, black pepper, and cumin powder.
  • Mix until well combined.
  • Place a tortilla on a flat surface.
  • Spread potato mixture evenly over one half of the tortilla.
  • Sprinkle shredded cheese on top of the potato layer.
  • Fold the tortilla in half.
  • Heat a pan over medium heat and add butter or oil.
  • Cook the quesadilla until golden brown on both sides and cheese melts.
  • Remove from pan, slice, and serve warm.

Notes

Use starchy potatoes for smoother texture.
Add vegetables or chicken for variation.
Cook on medium heat to avoid burning.
Serve with salsa or sour cream for extra flavor.
