Cheesy Potato Burritos

Cheesy Potato Burritos Recipe with crispy seasoned potatoes, melted cheese, and warm tortillas.

Ingredients
  

  • 3 cups potatoes peeled and diced
  • 4 large flour tortillas
  • 1 ½ cups shredded cheddar cheese
  • 2 tbsp olive oil
  • 1 tbsp taco seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup sour cream
  • ½ cup salsa
  • 1 cup black beans
  • 1 cup cooked ground beef or chicken
  • 1 –2 jalapeños

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add diced potatoes, salt, pepper, and taco seasoning.
  • Cook for 12–15 minutes, stirring occasionally until potatoes are golden and crispy.
  • Warm tortillas to make them easier to fold.
  • Place cooked potatoes in the center of each tortilla.
  • Add shredded cheese and optional ingredients like beans or salsa.
  • Fold sides inward and roll into burritos.
  • Place burritos seam-side down in a skillet.
  • Cook for 2–3 minutes per side until golden and slightly crispy.
  • Serve warm with toppings of choice.

Notes

Cut potatoes evenly for consistent cooking.
Avoid overcrowding pan for crisp texture.
Add sauces just before serving to prevent sogginess.
