Instructions
Heat olive oil in a skillet over medium heat.
Add diced potatoes, salt, pepper, and taco seasoning.
Cook for 12–15 minutes, stirring occasionally until potatoes are golden and crispy.
Warm tortillas to make them easier to fold.
Place cooked potatoes in the center of each tortilla.
Add shredded cheese and optional ingredients like beans or salsa.
Fold sides inward and roll into burritos.
Place burritos seam-side down in a skillet.
Cook for 2–3 minutes per side until golden and slightly crispy.
Serve warm with toppings of choice.
Notes
Cut potatoes evenly for consistent cooking.
Avoid overcrowding pan for crisp texture.
Add sauces just before serving to prevent sogginess.
