Cheesy Funeral Potatoes

Cheesy funeral potatoes made with hash browns, sour cream, cream soup, and melted cheddar. A classic comfort food casserole.

Ingredients
  

  • 32 ounces frozen hash brown potatoes slightly thawed
  • 2 cups sour cream
  • 1 can 10.5 oz cream of chicken soup
  • ½ cup unsalted butter melted
  • 2 cups shredded cheddar cheese
  • ½ cup onion finely chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups cornflakes lightly crushed (optional topping)
  • 2 tablespoons butter melted (optional topping)

Instructions
 

  • Preheat oven to 350°F and grease a 9×13-inch baking dish.
  • In a large bowl, mix sour cream, cream of chicken soup, melted butter, salt, and black pepper until smooth.
  • Stir in hash browns, shredded cheddar cheese, and chopped onion until evenly combined.
  • Spread mixture evenly into the prepared baking dish.
  • If using topping, mix crushed cornflakes with melted butter and sprinkle over the casserole.
  • Bake uncovered for 45–50 minutes until bubbly and lightly golden.
  • Let rest for 10 minutes before serving.

Notes

Cubed or shredded hash browns both work. Let the casserole rest briefly so it sets before serving.
