Cheesy funeral potatoes made with hash browns, sour cream, cream soup, and melted cheddar. A classic comfort food casserole.

frozen hash brown potatoes
slightly thawed

sour cream

melted

shredded cheddar cheese

finely chopped

cornflakes
lightly crushed (optional topping)

Instructions
Preheat oven to 350°F and grease a 9×13-inch baking dish.
In a large bowl, mix sour cream, cream of chicken soup, melted butter, salt, and black pepper until smooth.
Stir in hash browns, shredded cheddar cheese, and chopped onion until evenly combined.
Spread mixture evenly into the prepared baking dish.
If using topping, mix crushed cornflakes with melted butter and sprinkle over the casserole.
Bake uncovered for 45–50 minutes until bubbly and lightly golden.
Let rest for 10 minutes before serving.
Notes
Cubed or shredded hash browns both work. Let the casserole rest briefly so it sets before serving.
