Cheesy Dill Pickle Quesadilla

Crispy quesadilla filled with melted cheese and tangy dill pickles. Quick, easy, and perfect for snack or lunch.

Ingredients
  

  • 2 large flour tortillas
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup dill pickles thinly sliced
  • 1 tablespoon unsalted butter
  • ¼ teaspoon garlic powder

Instructions
 

  • Heat a large skillet over medium heat. Spread butter lightly on one side of each tortilla. Place one tortilla butter-side down in the skillet. Sprinkle half of the cheddar and mozzarella evenly over the tortilla. Add sliced dill pickles in a single layer and sprinkle with garlic powder. Top with remaining cheese. Place the second tortilla on top, butter-side up. Cook for 3–4 minutes until the bottom is golden brown. Carefully flip and cook another 3–4 minutes until cheese is fully melted and tortilla is crisp. Remove from skillet, let rest for 1–2 minutes, then slice and serve warm.

Notes

Do not overload with pickles to prevent sogginess. Cook over medium heat to allow cheese to melt before browning too much. Best served fresh for maximum crispness.
