Total Time 35 minutes mins
- 8 tostadas
- 1 pound ground beef
- 2 tablespoons vegetable oil
- 1 medium onion chopped
- 2 garlic cloves minced
- 1 jalapeño stemmed and chopped
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 2 teaspoons cilantro
- ½ teaspoon salt
- 1 cup canned tomato sauce
- 1 16 oz can refried beans, warmed
- 2 cups shredded lettuce
- 1 large tomato diced
- 1 cup shredded Monterey Jack cheese
- ½ cup crema
Heat the oil in a large skillet over medium heat. Sauté the onion, garlic, and jalapeño until softened, 6 to 8 minutes.
Add the ground beef and cook about 8 minutes, breaking it up with a spoon until no longer pink.
Stir in the chili powder, cumin, cilantro, and salt. Add the tomato sauce and cook, stirring occasionally, for 10 minutes.
To serve, spread each tostada with a thin layer of warm refried beans. Top with the ground beef, lettuce, tomato, and Monterey Jack cheese.
Drizzle each tostada with crema and serve right away.
Keep them crunchy: Warm the refried beans before spreading, and assemble the tostadas just before serving so the shells stay crisp.
Toppings bar: Set out extras like avocado, lime, pickled jalapeños, salsa, queso fresco, or radish so everyone can build their own.
Swaps: Use ground turkey or chicken in place of beef, or seasoned beans for a meatless version. If you don't have crema, use sour cream thinned with a little milk.
Make ahead: Cook the picadillo a day in advance and reheat before assembling.
