Ingredients

  • 8 thick slices brioche or Texas toast
  • 4 large eggs
  • 1 cup milk
  • ½ cup dry vanilla cake mix
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
  • 2 tablespoons rainbow sprinkles
  • 2 tablespoons powdered sugar optional topping

Instructions

  • In a large bowl, whisk together eggs, milk, dry cake mix, and vanilla extract until smooth. Heat a large skillet or griddle over medium heat and melt butter. Dip each slice of bread into the batter, coating both sides evenly without oversoaking. Place bread on the skillet and cook for 2–3 minutes per side until golden brown. Remove from heat and sprinkle with rainbow sprinkles while warm. Serve immediately topped with powdered sugar, syrup, or whipped cream if desired.

Notes

Cook over medium heat to prevent burning due to the sugar in the cake mix. Avoid oversoaking bread to keep texture fluffy. Best served fresh but can be stored in the refrigerator for up to 2 days and reheated in a toaster oven.
