Cajun Shrimp and Sausage Rice

Cajun shrimp and sausage rice made in one pot with bold spices, tender shrimp, and smoky sausage. Perfect for an easy dinner.

Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 12 oz smoked sausage sliced
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 cup diced bell pepper
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons green onions sliced

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add sliced sausage and cook until browned.
  • Add diced onion and bell pepper, cooking until softened.
  • Stir in minced garlic and cook briefly until fragrant.
  • Add rice and stir to coat with the sausage and vegetables.
  • Pour in chicken broth and add Cajun seasoning, paprika, salt, and black pepper.
  • Bring to a light boil, then reduce heat, cover, and simmer for 15–18 minutes until rice is tender.
  • Place shrimp on top of the cooked rice, cover, and cook for 3–5 minutes until shrimp turn pink.
  • Remove from heat and sprinkle with sliced green onions before serving.

Notes

Use andouille sausage for a more traditional Cajun flavor.
Adjust Cajun seasoning to control spice level.
Add diced tomatoes for extra moisture and flavor.
Reheat with a splash of broth to keep rice soft.
