Cajun Potato Soup

Cajun potato soup made with tender potatoes, smoked sausage, and creamy broth. A hearty and flavorful comfort meal.

Ingredients
  

  • 4 cups potatoes peeled and diced
  • 12 oz smoked sausage sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion diced
  • 3 cloves garlic minced
  • ½ cup celery diced
  • 1 tablespoon olive oil
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons green onions sliced

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add sliced sausage and cook until browned, then remove and set aside.
  • In the same pot, add diced onion and celery and cook until softened.
  • Stir in minced garlic and cook briefly until fragrant.
  • Add diced potatoes and chicken broth.
  • Stir in Cajun seasoning, paprika, salt, and black pepper.
  • Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
  • Lightly mash some of the potatoes to thicken the soup.
  • Return sausage to the pot and stir in heavy cream.
  • Simmer for 5 minutes until heated through.
  • Top with sliced green onions before serving.

Notes

Use russet potatoes for a thicker texture.
Adjust Cajun seasoning to control spice level.
Add shrimp or bacon for variation.
Reheat with extra broth if soup becomes too thick.
