Bruschetta Chicken Pasta

Bruschetta Chicken Pasta with fresh tomatoes, basil, juicy chicken, and tender pasta tossed together.

Ingredients
  

  • 1 ½ pounds boneless skinless chicken breasts
  • 12 oz pasta penne or rotini
  • 2 cups cherry or grape tomatoes diced
  • ½ cup fresh basil chopped
  • 3 garlic cloves minced
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ cup grated parmesan cheese

Instructions
 

  • Cook pasta until al dente and drain. Season and cook chicken in olive oil until done, then slice. Mix tomatoes, basil, garlic, balsamic vinegar, and olive oil. Toss pasta with chicken and bruschetta mixture. Add parmesan and serve warm.

Notes

Use fresh tomatoes and basil for best flavor. Do not overcook pasta.
