Blueberry Cobbler

Ingredients
  

  • 4 cups fresh blueberries
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 cup all-purpose flour
  • ½ cup granulated sugar for topping
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup milk
  • ½ cup unsalted butter melted
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 375°F and grease a 9x9-inch baking dish. In a large bowl, toss blueberries with sugar, cornstarch, lemon juice, and lemon zest. Pour mixture into prepared baking dish. In a separate bowl, whisk together flour, sugar, baking powder, and salt. Stir in milk, melted butter, and vanilla extract until just combined. Spoon batter evenly over blueberry mixture. Bake for 40–45 minutes until topping is golden brown and filling is bubbling. Let cool for 10–15 minutes before serving.

Notes

Do not skip cornstarch to ensure proper thickening. Allow cobbler to rest before serving for best texture. Store leftovers in the refrigerator for up to 4 days and reheat gently before serving.
