Ingredients
  

  • 3 cups cooked shredded chicken
  • 1 medium onion, finely chopped
  • 1 red bell pepper, diced small
  • 1 jalapeño, seeded and minced
  • 1 cup mild or medium taco sauce
  • 20 taco-size flour tortillas
  • 3 cups cheddar cheese, shredded
  • 3 cups Monterey Jack cheese, shredded

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • Combine shredded chicken, chopped onion, diced bell pepper, jalapeño, and taco sauce in a large bowl; stir well to coat.
  • Cut each tortilla in half.
  • Place about 2 tablespoons of chicken mixture and a pinch of mixed cheeses onto each half-tortilla.
  • Roll each piece into a tight cone shape.
  • Place a heat-safe glass or jar in the center of the baking sheet.
  • Arrange the first layer of cones around the base, points facing inward.
  • Sprinkle a handful of cheese over the first layer, then stack the remaining cones on top.
  • Bake for 20 minutes until the edges are golden and crispy and the cheese is bubbly.
  • Remove the center glass carefully and serve hot.

Notes

Use rotisserie chicken to save prep time. Shredding your own cheese is highly recommended for the best melt quality. Ensure the cones are rolled tightly so the filling remains secure during baking. Leftovers can be stored in the refrigerator and reheated in an oven or air fryer.
