Whip cream with sugar and vanilla until soft peaks form. Stir mascarpone until smooth. Fold whipped cream into mascarpone. Dip ladyfingers briefly in cherry juice. Layer cookies in dish. Spread cream and cherries. Repeat layers. Dust with cocoa and chocolate. Chill at least 6 hours before serving.
Notes
Do not oversoak ladyfingers. Chill overnight for best texture.
