Ingredients
  

  • 1 ½ cups dried quinoa, rinsed
  • 3 cups water or vegetable broth
  • 1.3 ounce package taco seasoning
  • 14 ounce can black beans, drained and rinsed
  • 8 ounces shredded cheddar or pepper jack cheese
  • 3 cups chopped romaine lettuce
  • 2 Roma tomatoes, diced
  • 1 whole avocado, diced
  • 1 small can sliced black olives, drained
  • Salsa to taste
  • Sour cream or Greek yogurt to taste

Instructions
 

  • Rinse the quinoa thoroughly under cold water using a fine-mesh strainer.
  • Combine rinsed quinoa and water in a medium saucepan. Bring to a boil, then cover, reduce heat to low, and simmer for 15 minutes or until liquid is absorbed.
  • Fluff the cooked quinoa with a fork and stir in the taco seasoning until evenly coated.
  • Divide the seasoned quinoa base into four serving bowls.
  • Top each bowl with black beans, shredded cheese, chopped lettuce, diced tomatoes, diced avocado, and sliced black olives.
  • Finish with a generous dollop of salsa and sour cream or Greek yogurt before serving.

Notes

Use vegetable broth instead of water during the simmering step for an extra boost of savory flavor. This recipe is excellent for meal prep; keep toppings stored separately from the quinoa to maintain freshness for up to 3 days in the refrigerator.
