Beef Burritos

Hearty beef burritos filled with seasoned ground beef, rice, beans, and melted cheese. Perfect for meal prep or dinner.

Ingredients
  

  • 1 pound ground beef 80/20
  • 1 tablespoon olive oil
  • 1 small yellow onion diced
  • 3 garlic cloves minced
  • 2 tablespoons taco seasoning
  • ½ cup tomato sauce
  • 2 cups cooked white rice
  • 1 cup black beans drained and rinsed
  • 1 ½ cups shredded cheddar or Mexican blend cheese
  • 6 large flour tortillas
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

  • Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 3–4 minutes until softened. Stir in minced garlic and cook for 30 seconds. Add ground beef and cook for 6–8 minutes, breaking it apart until browned. Drain excess grease if needed. Sprinkle taco seasoning, salt, and black pepper over the beef and stir to combine. Pour in tomato sauce and simmer for 3–4 minutes until slightly thickened. Warm tortillas for about 20 seconds to make them pliable. Lay a tortilla flat and spoon about 1/3 cup seasoned beef into the center. Add a few tablespoons of rice and black beans, then sprinkle cheese on top. Fold sides inward and roll tightly from the bottom up to form a burrito. Place seam-side down in a lightly oiled skillet and cook for 2–3 minutes per side until lightly golden and sealed. Repeat with remaining tortillas. Serve warm.

Notes

Do not overfill burritos to ensure easy rolling. Toast seam-side down first to seal properly. Store wrapped burritos in the refrigerator for up to 4 days or freeze for up to 2 months. Reheat in oven or skillet for best texture.
