Beef and Cheese Chimichangas

Beef and cheese chimichangas with crispy tortillas and savory filling. Easy comfort food recipe.

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning or 2 tablespoons
  • ½ cup onion chopped
  • 2 cloves garlic minced
  • 2 cups shredded cheddar or Mexican blend cheese
  • 6 large flour tortillas
  • 1 cup refried beans optional
  • 2 cups oil for frying

Instructions
 

  • Cook ground beef in a skillet until browned.
  • Add onion and cook until softened, then add garlic.
  • Stir in taco seasoning and a little water and simmer until thickened.
  • Let filling cool slightly.
  • Place filling and cheese onto tortillas and roll tightly.
  • Heat oil to 350°F and fry chimichangas seam-side down until golden, about 3 to 4 minutes per side.
  • Remove and drain on paper towels.
  • Serve hot.

Notes

Do not overfill tortillas.
Maintain oil temperature for even cooking.
Bake instead of frying for a lighter version.
