Beef and Cheese Chimichangas

Ingredients

ground beef
1
packet taco seasoning
or 2 tablespoons
½
cup
onion
chopped
2
cloves
garlic
minced
2
cups
shredded cheddar or Mexican blend cheese
6
large flour tortillas
1
cup
refried beans
optional
2
cups
oil
for frying
Instructions
Cook ground beef in a skillet until browned.
Add onion and cook until softened, then add garlic.
Stir in taco seasoning and a little water and simmer until thickened.
Let filling cool slightly.
Place filling and cheese onto tortillas and roll tightly.
Heat oil to 350°F and fry chimichangas seam-side down until golden, about 3 to 4 minutes per side.
Remove and drain on paper towels.
Serve hot.
Notes
Do not overfill tortillas.
Maintain oil temperature for even cooking.
Bake instead of frying for a lighter version.
