Banana Bread Cinnamon Rolls

Banana bread cinnamon rolls made with ripe bananas, soft dough, and cinnamon sugar filling. Perfect for breakfast or brunch.

Ingredients
  

  • 1 cup ripe bananas mashed (2–3 bananas)
  • ¾ cup whole milk warm
  • 2 ¼ teaspoons active dry yeast
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter melted
  • 1 large egg
  • 3 ½ cups all-purpose flour
  • 1 teaspoon salt
  • Cinnamon Filling:
  • ¾ cup brown sugar
  • 2 teaspoons ground cinnamon
  • cup unsalted butter softened

Instructions
 

  • In a bowl, combine warm milk, yeast, and a small pinch of sugar. Let sit 5–10 minutes until foamy.
  • Add mashed bananas, remaining sugar, melted butter, egg, and salt. Mix until combined.
  • Gradually add flour and mix until a soft, slightly tacky dough forms.
  • Knead until smooth and elastic.
  • Place dough in a greased bowl, cover, and let rise until doubled.
  • Roll dough into a large rectangle on a floured surface.
  • Spread softened butter evenly over dough.
  • Sprinkle brown sugar and cinnamon evenly over the butter.
  • Roll dough tightly into a log and slice into rolls.
  • Place rolls in a greased baking dish, cover, and let rise until puffy.
  • Bake in a preheated 350°F oven for 25–30 minutes until lightly golden.
  • Cool slightly before serving or glazing if desired.

Notes

Use very ripe bananas for best flavor and softness. Dough will be softer than traditional cinnamon roll dough.
