Baked Chicken, Macaroni and Cheese, Fried Potatoes

Baked Chicken, Macaroni and Cheese, Fried Potatoes recipe with crispy chicken, creamy pasta, and golden potatoes.

Ingredients
  

  • 2 lbs chicken thighs or drumsticks
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 12 oz elbow macaroni
  • 2 cups shredded cheddar cheese
  • 2 cups milk
  • 3 tbsp butter
  • 3 cups potatoes peeled and diced
  • 3 tbsp oil for frying
  • 1 tsp salt
  • ½ tsp black pepper

Instructions
 

  • Preheat oven to 400°F.
  • Season chicken with olive oil, garlic powder, paprika, salt, and pepper.
  • Place chicken on a baking sheet and bake for 35–40 minutes until cooked through.
  • Cook macaroni according to package directions, then drain.
  • In a saucepan, melt butter and add milk, heating gently.
  • Add cheese and stir until melted and smooth.
  • Mix cooked macaroni into the cheese sauce.
  • Heat oil in a skillet and cook diced potatoes with salt and pepper for 12–15 minutes until crispy.
  • Serve chicken, mac and cheese, and fried potatoes together while warm.

Notes

Cook potatoes in a single layer for crisp texture.
Use freshly shredded cheese for smooth sauce.
Let chicken rest before serving for best results.
