Baileys Irish Cream Cheesecake

Baileys Irish Cream cheesecake with a chocolate cookie crust and smooth, chocolate-infused filling. A rich, indulgent dessert.

Ingredients
  

  • 2 cups chocolate cookie crumbs
  • 2 tablespoons granulated sugar
  • ½ cup unsalted butter melted
  • 24 ounces cream cheese softened
  • 1 cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • ¾ cup sour cream
  • ¾ cup Baileys Irish Cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions
 

  • Preheat oven to 325°F and grease a 9-inch springform pan.
  • Combine chocolate cookie crumbs, sugar, and melted butter. Press firmly into the bottom of the pan.
  • Bake crust for 10 minutes and let cool slightly.
  • Beat cream cheese until smooth.
  • Add sugar and cocoa powder and mix until fully combined.
  • Mix in sour cream, Baileys, vanilla extract, and salt.
  • Add eggs one at a time, mixing on low speed just until incorporated.
  • Pour filling over the prepared crust and smooth the top.
  • Bake for 55–65 minutes until edges are set and the center slightly jiggles.
  • Turn off oven, crack the door, and cool cheesecake inside for 30 minutes.
  • Refrigerate for at least 4 hours or overnight before serving.

Notes

Use room-temperature ingredients for the smoothest texture. Chill fully before slicing for clean cuts.
