Instructions
Preheat oven to 325°F and grease a 9-inch springform pan.
Combine chocolate cookie crumbs, sugar, and melted butter. Press firmly into the bottom of the pan.
Bake crust for 10 minutes and let cool slightly.
Beat cream cheese until smooth.
Add sugar and cocoa powder and mix until fully combined.
Mix in sour cream, Baileys, vanilla extract, and salt.
Add eggs one at a time, mixing on low speed just until incorporated.
Pour filling over the prepared crust and smooth the top.
Bake for 55–65 minutes until edges are set and the center slightly jiggles.
Turn off oven, crack the door, and cool cheesecake inside for 30 minutes.
Refrigerate for at least 4 hours or overnight before serving.
Notes
Use room-temperature ingredients for the smoothest texture. Chill fully before slicing for clean cuts.
