Arugula Salad

Arugula Salad

Fresh arugula salad with lemon dressing, Parmesan cheese, and toasted nuts.
Prep Time 10 minutes

Ingredients
  

  • 5 cups fresh arugula
  • 1 cup cherry tomatoes halved
  • ½ cup shaved Parmesan cheese
  • ¼ cup toasted pine nuts or walnuts
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Whisk olive oil, lemon juice, honey, Dijon mustard, salt, and pepper in a small bowl. Place arugula in a large bowl and add cherry tomatoes and toasted nuts. Drizzle dressing over the salad and toss gently. Top with shaved Parmesan and serve immediately.

Notes:
Add dressing just before serving to keep arugula crisp.
