Apple Fritter Cookies

Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • ½ cup unsalted butter softened
  • ¾ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups apples peeled and diced
  • Glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions
 

  • Cook diced apples with a small amount of sugar and cinnamon until just softened. Cool completely. Preheat oven to 350°F. Mix flour, baking powder, baking soda, spices, and salt. Cream butter and brown sugar. Add egg and vanilla. Mix in dry ingredients gently. Fold in cooled apples. Scoop dough onto baking sheet. Bake 12–15 minutes until edges set. Cool and drizzle with glaze.

Notes

Do not overbake. Cookies firm up as they cool.
