boneless skinless chicken thighs or breasts

long-grain rice

chicken broth

olive oil

chopped onion

ground turmeric

ground cumin

black pepper

spinach

cup
peas

cup
diced carrots

lemon juice

tbsp
chopped parsley or cilantro
Instructions
Heat olive oil in a large pot over medium heat.
Season chicken with salt, pepper, turmeric, and cumin.
Cook chicken for 4–5 minutes per side until lightly browned, then remove and set aside.
In the same pot, cook onion and garlic until softened.
Add rice and stir to coat with oil and spices.
Pour in chicken broth and bring to a gentle boil.
Return chicken to the pot, reduce heat, and cover.
Simmer for 18–20 minutes until rice is tender and chicken is cooked through.
Add spinach, peas, and carrots during the last few minutes of cooking.
Remove from heat, let rest, then add lemon juice and garnish with herbs before serving.
Notes
Use long-grain rice for best texture.
Add extra broth when reheating to keep rice soft.
Customize with additional vegetables if desired.
