Cook Time 35 minutes

Ingredients

  • 1 ½ cups ripe bananas mashed (about 3 bananas)
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • cup unsalted butter melted
  • ¾ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Instructions

  • Preheat air fryer to 320°F for 3–5 minutes. Grease a small loaf pan that fits inside the air fryer basket. In a bowl, whisk together flour, baking soda, and salt. In a separate bowl, mix mashed bananas, melted butter, brown sugar, egg, vanilla extract, and milk until smooth. Gradually stir dry ingredients into wet mixture until just combined. Pour batter into prepared loaf pan and smooth the top. Place loaf pan into air fryer basket. Bake at 320°F for 30–40 minutes, checking for doneness with a toothpick inserted into the center. If the top browns too quickly, cover loosely with foil during the final 10 minutes. Allow to cool for 15 minutes before slicing.

Notes

Use very ripe bananas for maximum sweetness and moisture. Do not overfill the loaf pan. Check early since air fryer models vary. Store at room temperature for up to 3 days or freeze for up to 2 months.
