Ingredients

  • 1 pound ground beef 80/20
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • ½ cup tomato sauce
  • ¼ cup water
  • 2 cups cooked white rice
  • 1 cup refried beans
  • 1 ½ cups shredded cheddar or Mexican blend cheese
  • ½ cup sour cream
  • 4 large flour tortillas
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Heat olive oil in a large skillet over medium heat. Add ground beef and cook for 6–8 minutes, breaking it apart until browned. Drain excess grease if needed. Stir in taco seasoning, salt, black pepper, tomato sauce, and water. Simmer for 3–4 minutes until thickened. Warm refried beans in a small saucepan over low heat. Warm tortillas for about 20 seconds until pliable. Lay one tortilla flat and spread about 1/4 cup refried beans in the center. Add 1/2 cup seasoned beef, 1/2 cup rice, shredded cheese, and a spoonful of sour cream. Fold sides inward and roll tightly from the bottom up. Place burrito seam-side down in a lightly oiled skillet over medium heat and cook for 2–3 minutes per side until lightly golden and sealed. Serve warm.

Notes

Do not overfill to ensure easy rolling. Toast seam-side down first to prevent opening. Store wrapped burritos in the refrigerator for up to 4 days or freeze for up to 2 months. Reheat in oven or skillet for best texture.
