15-Minute Elote Corn in a Cup Recipe

15-minute elote corn in a cup recipe made with creamy sauce, lime, cheese, and spices. A quick and flavorful street corn dish.

Ingredients
  

  • 3 cups corn kernels
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 2 tablespoons lime juice
  • ½ cup cotija cheese crumbled
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • 2 tablespoons fresh cilantro chopped

Instructions
 

  • Cook corn by boiling for 5–7 minutes or sautéing in a pan until heated and slightly charred.
  • Transfer cooked corn to a mixing bowl.
  • Add mayonnaise, sour cream, lime juice, chili powder, paprika, garlic powder, and salt.
  • Mix until corn is evenly coated.
  • Stir in most of the cotija cheese and chopped cilantro.
  • Spoon mixture into cups.
  • Top with remaining cheese, cilantro, and extra chili powder.
  • Serve immediately while warm.

Notes

Use fresh, frozen, or canned corn depending on availability.
Adjust chili powder for spice preference.
Feta cheese can replace cotija if needed.
Can be served warm or cold as a salad-style dish.
