Mini Vegan Crumb Bars

Ingredients

Steps

  1. Prep the pan. Heat your oven to 350°F and line a mini square pan or mini muffin tin with parchment so the bars lift out easily.
  2. Mix the dry ingredients. In a bowl, combine flour, oats, brown sugar, baking powder, and salt.
  3. Add the coconut oil. Work it in with a fork or your hands until the mixture forms soft, sandy clumps. Don’t worry it’s supposed to look a little uneven.
  4. Make the filling. Toss berries with sugar, lemon juice, and cornstarch until coated.
  5. Press the base. Firmly press about two-thirds of the crumb mixture into your mini pan or muffin cups. Keep it even so the bars hold together.
  6. Layer the berries. Spoon the berry mixture over the base, keeping the layer thin but generous.
  7. Add the crumble. Sprinkle the remaining crumb mixture on top little clusters make the prettiest finish.
  8. Bake. Bake 18–22 minutes, until the top looks lightly golden and the berries bubble around the edges.
  9. Cool fully. Let them rest before cutting; vegan bars need a bit of time to set.
