Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar

  • Pinch of salt

Steps

  1. Preheat your oven to 350°F and lightly grease a mini muffin pan. A little butter or spray helps the cups release easily later.
  2. Cream the butter and sugar until light and fluffy. Don’t rush this step this is what makes your cups tender.
  3. Mix in the egg yolk and vanilla until smooth. If it looks a bit thick, that’s exactly right.
  4. Whisk together the flour, baking powder, and salt, then fold into the wet mixture. You’ll get a soft, workable dough.
  5. Roll small 1-inch balls and place them in the mini muffin wells. Gently press the center with your thumb to form a shallow cup.
