Mini Jell-O Cookies

If you’re craving something colorful, soft, and just plain fun, these Mini Jell-O Cookies are such a cute treat to whip up. They bake up tiny, cheerful, and lightly sweet the kind of recipe that instantly brightens a plate. And yes, they’re as easy as they look.

Jell‑o Cookies

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 small box (3 oz) Jell-O, any flavor
  • Optional: 1–2 tbsp extra Jell-O powder for rolling (adds color + flavor)
  • Optional swap: Use strawberry, lime, or raspberry for the brightest pops of color

Steps

  1. Cream the butter and sugar in a bowl until light and fluffy. Take your time here this gives the cookies their soft bite.
  2. Mix in the egg and vanilla until smooth. Don’t worry if it looks a little loose; it tightens up with the dry ingredients.
  3. Stir in the flour, baking powder, salt, and the Jell-O powder. The dough will turn vibrant quickly that’s what we want.
  4. Roll into tiny 1-inch balls, then gently coat in extra Jell-O powder if you like a stronger color.
  5. Chill for 20 minutes. This helps them keep their cute mini shape.
  6. Bake at 350°F for 8–10 minutes on a lined sheet. Pull them when the edges are just set they continue firming as they cool.
  7. Cool completely so the colors stay bright and the texture settles into a soft-chewy center.

Chef’s Tips

  • If the dough feels too soft to roll, chill it for 10 minutes and it will firm right up.
  • For a brighter cookie, sprinkle just a touch of flavored Jell-O on top right after baking.
  • Store these minis in an airtight container they stay soft for 3–4 days.

Variations

  • Rainbow Minis: Use multiple Jell-O flavors and separate the dough into colorful batches.
  • Sugary Sparkle: Roll the dough balls in coarse sugar instead of Jell-O for a pretty shimmer.
  • Citrus Pop: Add ½ tsp lemon or lime zest to complement lemon or lime Jell-O.
