Mashed Potato Cheese Puffs

Ingredients

  • 1 cup mashed potatoes (leftovers work great)
  • 1 large egg
  • ½ cup shredded cheddar cheese
  • 2 tbsp grated Parmesan
  • 2 tbsp flour (or almond flour for a lighter version)
  • 1 tbsp melted butter
  • ¼ tsp garlic powder (optional)
  • Salt & pepper to taste
  • Optional swap: Use mozzarella for a stretchier, milder puff

Steps

  1. Preheat your oven to 400°F and lightly grease a mini muffin tin. A little oil helps the edges crisp beautifully.
  2. In a bowl, mix the mashed potatoes, egg, cheddar, Parmesan, flour, butter, garlic powder, and seasoning. Don’t worry if the mixture feels thick hat’s exactly what keeps the puffs sturdy.
  3. Spoon the mixture into the mini muffin cups, filling each about ¾ full.
  4. Gently smooth the tops with the back of a spoon so they bake evenly.
  5. Bake for 18–22 minutes, or until the tops turn golden and the edges look slightly crisp.
  6. Let them cool for 3–5 minutes before removing they’ll firm up and release more easily.
  7. Serve warm and enjoy that cheesy, cloud-like texture.

Chef’s Tips
