They’re wonderfully simple to make, yet taste like something from a charming little bakery. Perfect for spring gatherings, afternoon treats, or whenever you’re craving bright lemon flavor.

Ingredients

For the crust & crumb topping:

  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 tsp vanilla extract

For the lemon filling:

  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 2 large egg yolks

Optional: Add an extra tablespoon of zest for a bolder lemon flavor.

Steps

  1. Make the crumb base. Mix melted butter, sugar, flour, salt, and vanilla until sandy and soft. Don’t worry it’s supposed to resemble crumbs.
  2. Press into a pan. Add 2/3 of the mixture to a parchment-lined 8×8 pan and press firmly.
  3. Bake the crust at 350°F for 10 minutes to give it a head start.
  4. Mix the filling. Whisk condensed milk, lemon juice, zest, and egg yolks until smooth and creamy.
  5. Pour over the warm crust. Spread evenly, then sprinkle the remaining crumb mixture on top.
  6. Bake for 20–25 minutes, until the edges are lightly golden and the center looks set.
  7. Cool completely. Chill for at least 1 hour for clean, beautiful slices.

  • Chill before slicing: It keeps the layers neat and the texture perfect.

Variations

  • Lemon blueberry bars: Add 1/2 cup fresh blueberries to the filling.
