Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 1/2 tbsp honey
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: red pepper flakes or toasted pecans for crunch

Steps

  1. Prep the sprouts. Trim and halve them so they roast evenly. A few loose leaves are fine they get extra crispy.
  2. Make the glaze. In a bowl, whisk olive oil, balsamic, honey, garlic powder, salt, and pepper.
  3. Toss to coat. Add Brussels sprouts and mix until shiny and well coated.
  4. Spread on a sheet pan. Place cut-side down for maximum caramelization.
  5. Roast at 425°F for 20–25 minutes, flipping once. Don’t worry if the edges look dark that’s where all the flavor is.
  6. Finish with extra glaze (optional). Drizzle a tiny bit more honey and balsamic after roasting for extra shine.

Chef’s Tips

  • High heat = crisp edges: Brussels sprouts love a hot oven.
  • Don’t overcrowd: Space them out so they roast instead of steam.
  • Balance sweetness: Add more balsamic if you want a tangier finish.

Variations

  • Spicy-sweet: Add red pepper flakes before roasting.
  • Maple balsamic: Swap the honey for maple syrup for a deeper fall flavor.
  • Nutty version: Toss toasted pecans or walnuts on top.
