These Honey Balsamic Brussels Sprouts are golden, caramelized, and perfectly balanced with sweetness and tang. They make a delicious side dish for weeknights or holidays simple to prepare yet so full of flavor.
Ingredients
- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 1/2 tbsp honey
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Optional: red pepper flakes or toasted pecans for crunch
Steps
- Prep the sprouts. Trim and halve them so they roast evenly. A few loose leaves are fine they get extra crispy.
- Make the glaze. In a bowl, whisk olive oil, balsamic, honey, garlic powder, salt, and pepper.
- Toss to coat. Add Brussels sprouts and mix until shiny and well coated.
- Spread on a sheet pan. Place cut-side down for maximum caramelization.
- Roast at 425°F for 20–25 minutes, flipping once. Don’t worry if the edges look dark that’s where all the flavor is.
- Finish with extra glaze (optional). Drizzle a tiny bit more honey and balsamic after roasting for extra shine.
Chef’s Tips
- High heat = crisp edges: Brussels sprouts love a hot oven.
- Don’t overcrowd: Space them out so they roast instead of steam.
- Balance sweetness: Add more balsamic if you want a tangier finish.
Variations
- Spicy-sweet: Add red pepper flakes before roasting.
- Maple balsamic: Swap the honey for maple syrup for a deeper fall flavor.
- Nutty version: Toss toasted pecans or walnuts on top.
