These No-Bake Peanut Butter Oat Cups are one of those little recipes you’ll come back to again and again. They’re chewy, chocolatey, and perfectly sweet and best of all, there’s no oven required. Just mix, press, chill, and enjoy. Simple treats don’t get better than this.
Ingredients
- 1 cup rolled oats
- 1/2 cup creamy peanut butter
- 1/4 cup honey or maple syrup
- 1/2 tsp vanilla extract
- 1/2 cup chocolate chips
- 1 tsp coconut oil (optional, helps chocolate melt smoothly)
Optional swaps:
- Use almond or sunflower butter if needed
- Add a pinch of salt for a sweet-salty bite
Steps
- Mix the base. In a bowl, stir together oats, peanut butter, honey, and vanilla until well combined. Don’t worry if it feels thick that’s exactly right.
- Press into cups. Line a muffin tin with paper liners and press the oat mixture firmly into the bottoms.
- Melt the chocolate. Microwave chocolate chips with coconut oil in 20-second bursts, stirring until smooth.
- Top the cups. Spoon melted chocolate over each oat base and gently spread.
- Chill. Place the pan in the fridge for 30–45 minutes, until set.
- Enjoy. Peel off the liners and enjoy chilled or slightly softened.
Chef’s Tips
- Press firmly: A tight base helps the cups hold together perfectly.
- Use old-fashioned oats: They give the best chewy texture.
- Store chilled: Keeps the cups firm and fresh.
Variations
- Protein boost: Stir 1–2 tbsp protein powder into the oat mixture.
- Crunchy version: Add chopped peanuts or crispy rice cereal.
- White chocolate drizzle: Finish with a light drizzle for a pretty touch.
