These little pieces of chicken are soft, creamy, and bursting with the comforting flavor of garlic and Parmesan. When you’re in the mood for a warm and filling snack, they are ideal since they cook quickly and have a pleasant texture without being overpowering.
Ingredients
Chicken breast, 1 lb, chopped into small, bite-sized pieces
one tablespoon of olive oil
2 tablespoons of butter
minced 3 garlic cloves
half a cup of heavy cream
a third of a cup of grated Parmesan cheese
25% chicken broth
Italian seasoning, 1/4 teaspoon
Add salt and pepper as desired.
Top with fresh parsley (optional)
Possible swaps:
For a lighter sauce, use half-and-half in place of cream.
If you want a more intense taste, use grated Romano cheese instead.
Actions
1.Add salt, pepper, and Italian seasoning to the chicken. Keep the seasoning mild since little pieces cook quickly.
2.Heat olive oil in a pan and sauté the chicken pieces for 4–5 minutes, or until they are lightly golden. Even if they aren’t completely cooked, they will finish in the sauce, so don’t worry.
3.Let the garlic become fragrant in the pan without browning, then add the butter.
Pour in the chicken broth and stir, scraping up any golden bits (they add so much flavor).
4.Allow the sauce to thicken for 2–3 minutes after adding the cream and Parmesan. It should now be smooth and stick to the tiny pieces.
5.Gently simmer until the chicken is well cooked and the sauce covers all the pieces perfectly.
Put parsley on top and serve warm.
Tips from the Chef
Slice the chicken into pieces of the same size to ensure that they cook at the same rate.
To thin the sauce, add 1–2 tablespoons of stock if it seems too thick.
Parmesan melts best at low heat; for a creamy, smooth sauce, keep it gentle.
Variations
Lemon Garlic: To enhance the flavor, add 1 teaspoon of lemon zest.
Spinach Parmesan: At the end, add a tiny bit of chopped spinach and mix.
Spicy Creamy Chicken: For added warmth, sprinkle in a bit of red pepper flakes.
