Chocolate Mousse Cake

Ingredients

For the cake layer:

  • 1/2 cup semi-sweet chocolate chips
  • 2 tbsp butter
  • 1/4 cup sugar
  • 1 egg
  • 1/4 cup all-purpose flour

For the mousse layer:

  • 1/2 cup heavy cream

Steps

  1. Melt the chocolate and butter for the cake layer until smooth. Let it cool slightly so it doesn’t scramble the egg.
  2. Whisk in the sugar and egg, then fold in the flour and salt. The batter will look thick and glossy just right.
  3. Spread into a lined mini cake pan or small baking dish and bake at 350°F for 12–14 minutes. The center should look set but still soft.
  4. Cool the cake layer completely before adding the mousse this keeps the layers clean and pretty.
  5. Warm 1/4 cup of the cream and pour over the chocolate chips for the mousse. Stir until silky, then let cool to room temp.
