Ingredients
For the crust & crumb topping:
- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1 tsp vanilla extract
For the lemon filling:
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup fresh lemon juice
- 1 tbsp lemon zest
- 2 large egg yolks

Steps
- Make the crumb base. Mix melted butter, sugar, flour, salt, and vanilla until sandy and soft. Don’t worry it’s supposed to resemble crumbs.
- Press into a pan. Add 2/3 of the mixture to a parchment-lined 8×8 pan and press firmly.
- Bake the crust at 350°F for 10 minutes to give it a head start.
- Mix the filling. Whisk condensed milk, lemon juice, zest, and egg yolks until smooth and creamy.
- Pour over the warm crust. Spread evenly, then sprinkle the remaining crumb mixture on top.
- Bake for 20–25 minutes, until the edges are lightly golden and the center looks set.
- Cool completely. Chill for at least 1 hour for clean, beautiful slices.
