Ingredients

For the cauliflower:

  • 1 medium head cauliflower, cut into florets

  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the sticky sesame sauce:

  • 1/3 cup tamari (gluten-free soy sauce)
  • 1/4 cup maple syrup or honey (use maple for vegan)
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1–2 tsp sriracha (optional for heat)
  • 1 clove garlic, minced
  • 1 tsp fresh grated ginger
  • 1 tbsp cornstarch + 2 tbsp water (slurry)

Steps

  1. Prep the cauliflower. Cut into medium florets not too small or they’ll soften too much.
  2. Mix the batter. Whisk the flour, plant milk, garlic powder, salt, and pepper until smooth. The batter should lightly coat each piece.
  3. Coat and bake. Dip the florets, shake off excess, and place on a lined sheet pan. Bake at 425°F for 20–25 minutes, flipping halfway. They should look lightly crisp.
  4. Make the sauce. In a small pot, combine tamari, maple syrup, rice vinegar, sesame oil, sriracha, garlic, and ginger. Bring to a gentle simmer.
