These mini no-bake energy balls are my go-to when I want something quick, nourishing, and a little bit sweet. They’re tiny, portable, and endlessly customizable and today I’m sharing six of my favorite flavors so you can mix and match depending on your mood.
Ingredients (Base Recipe)
This simple base keeps everything soft, chewy, and perfectly rollable.
- 1 cup rolled oats
- 1/2 cup nut butter (peanut, almond, or cashew)
- 1/3 cup honey or maple syrup
- 1/4 cup ground flaxseed
- 1 tsp vanilla extract
- Pinch of salt
Optional swaps: - Use sunflower butter for a nut-free option.
- Swap flaxseed for chia seeds if you prefer a little crunch.
Steps
- Stir together the nut butter and honey until smooth and glossy. This helps everything bind well.
- Add the oats, flaxseed, vanilla, and salt and mix until a thick dough forms.
- Choose one of the six flavor add-ins below and fold it into the base mixture.
- Scoop and roll into mini 1-inch balls. Don’t stress if they feel sticky chilling helps.
- Refrigerate for 20–30 minutes so they firm up and hold their shape.
- Store in an airtight container in the fridge for up to 1 week.
- Enjoy straight from the fridge they stay satisfyingly chewy and soft.
Chef’s Tips
- If the mixture feels too dry, add 1–2 tsp extra nut butter. Too sticky? Sprinkle in a little more oats.
- Wet your hands lightly before rolling to keep the dough from sticking.
- These freeze beautifully keep a stash for busy days.
