These little Grinch-green bites are such a fun holiday treat, especially when you want something festive without turning on the oven. They’re creamy, sweet, and just mischievous enough to make everyone smile.

Ingredients
- 1 (14.3 oz) package Oreo cookies
- 1 (8 oz) block cream cheese, softened
- 12 oz bright-green melting wafers
- 1–2 tsp coconut oil (optional, for smoother melting)
- Red heart sprinkles (for that classic Grinch look)
Optional swaps:
- Use golden Oreos for a lighter flavor.
- Swap cream cheese with ½ cup mascarpone for extra richness.
Steps
- Crush the Oreos in a food processor until you have fine crumbs. A few bigger bits are okay they add a little texture.
- Mix in the cream cheese until the mixture turns into a soft, doughy consistency. Don’t worry if it feels sticky that’s exactly right.
- Roll into mini balls, about 1 tablespoon each, and place them on a parchment-lined tray.
- Freeze for 15–20 minutes so they firm up and won’t crumble in the coating.
- Melt the green wafers with a teaspoon of coconut oil if needed to loosen the texture.
- Dip each chilled ball into the melted coating, tapping off the excess.
- Add a red heart sprinkle while the coating is still wet, then let them set completely.
Chef’s Tips
- If your coating looks too thick, a tiny splash of coconut oil or shortening will smooth it right out.
- Keep the truffles cold before dipping warm truffles tend to slide off the fork.
- Store them in the fridge in an airtight container; they stay fresh for up to 5 days.
Variations
- Minty Grinch: Add ½ tsp peppermint extract to the Oreo mixture.
- White Chocolate Version: Dip in white chocolate tinted green with gel coloring.
- Grinch Pops: Add mini lollipop sticks before freezing for adorable party treats.
